This has been a crazy few weeks. For some reason, I just can’t seem to catch up. I’ve been wanting to try this recipe that two of my friends (who are also in my Challenge Group) have been talking about, and just haven’t made it happen. I was rushing around today and knew that I needed something easy for dinner, so I thought it would the perfect opportunity to make it since it’s a Crockpot recipe. My friends are fancy as shit in the kitchen, so I’m always a little nervous to try to duplicate what they’re doing, but they promised it was easy. And truly, this is as easy as it gets. All I did was slice an onion and of course I made Miles dump the raw chicken into the crockpot, because even though I’ve come a long way in the kitchen, that will always make me gag.

Y’all, I literally cut one onion and then just opened cans of artichokes, opened a package of chicken, threw some sundried tomatoes in there and added some seasoning. That’s it. So freaking easy. I put it over arugula, but you could have had it with any veggie. It smelled so good when walked into the house that I was seriously concerned about whether or not I was actually going to be able to wait until dinner. I’m actually a little pissed, because I totally forgot the turkey bacon part because I was so excited to finally eat it, and holy shit that would have made it even more incredible. I definitely won’t forget that step next time. This recipe is definitely going in the weekly rotation. Try it and let me know what you think.
