So now that I am in “Project: Be Comfortable in Only a Sports Bra for the Triathlon”, it is time to get my nutrition on point. I eat really clean on a normal basis, but it’s time to take it to the next level. I’ve been in kind of a food rut, just getting sick of all the things that I eat in a normal week. It’s time for me to get back to the basics. I was brainstorming last night about what I was eating back when I lost the last 20 pounds. Then I remembered…salsa chicken! This is a recipe that I got from my sister-in-law, and it is SO SO SO awesome. It is so easy (which is key), inexpensive, and super healthy. You can make a big batch in the Crock Pot at the beginning of the week and eat it throughout the week in different ways. Here’s the recipe:
1 lb boneless, skinless chicken breast
1 packet of taco seasoning
1 jar of salsa (I usually use a Medium salsa that it more liquidy than chunky)
1 can of black beans (drained)
1 can of kidney beans (drained)
1 can of corn (drained)
Put all of this in the Crock Pot on low for 6 hours, and THAT IS IT! When it’s ready the chicken with get all shreddy and delicious. It makes about 8 servings at about 200 calories per serving.
I usually put this over baby romaine or make tacos using 2 sprouted corn tortillas. If I am feeling like I want to spice it up, then I add 1/4 of an avocado and top it off with Cholula. I just had it for lunch, and it was delicious. You’ve got to try it and let me know what you think!
