Miles and I pretty much have 10 or so awesome meals that we love to make. They are quick, easy and pretty inexpensive. We eat them over and over again. I like meals that take very little prep work, very little time and are easy to clean up. That’s how we roll. Most of the time when I’m ready to eat, I’m ready to eat (especially pregnant), and I just don’t have the patience for anything that takes a long time. (I also turn into a mega bitch when I get too hungry, so anything to avoid that.) I thought I would share the meal we had tonight, and we usually eat it about once a week. It’s fing delish! We are definitely trying to save some money now that we have two babies on the way, but one thing that we won’t sacrifice is the quality of the food we eat. Go for the high quality, organic when possible food. It’s worth the money.
Sweet Potato Gnocchi with Veggies
Ingredients:
-Gluten Free Sweet Potato Gnocchi- we get this at the Whole Foods in the fresh pasta section by the cheese
-Asparagus- There is no exact amount, we just get one of the smaller bundles. You do have to cut the asparagus, but the pieces don’t have to be super small, so it’s NBD. -Peppers- We get the precut tri colored peppers from Whole Foods. It’s way more fun when there’s no chopping involved.
-Mushrooms- We get different types of mushrooms depending on what’s on sale
-Sliced Almonds (1/4 cup)
-Organic Earth Balance (1.5 tbsp)
Instructions:
-Cook the gnocchi in boiling water for 2 mins and then drain.
-In a medium pan, cook the asparagus in organic olive oil spray and garlic salt
-After about 3-5 minutes, add the chopped peppers into the pan
-After about 3 minutes, add the mushrooms into the pan
-Toast the sliced almonds on a baking sheet in the toaster oven
-Put everything together in a big bowl and toss in Earth Balance.
This makes two servings. We usually add some red pepper flakes and sometimes feta on top. I’m not counting calories while I’m preggo, but for those of you who are, this meal is about 480 calories per serving. You may want to recalculate based on your portions of the veggies and Earth Balance.
