So, I know that oatmeal (not instant) is one of the best things that you can eat for breakfast. I have a few issues with oatmeal that makes me not want to eat it every morning. First of all, if you get steel cut oats or rolled oats, it takes forever to cook. Then once it is finally cooked, it takes forever to cool down. Charleston is a hot place, and sometimes it just feels wrong eating something hot when it is hot outside. I wake up everyday at 5am and head to the gym, so my morning routine needs to be fast so I can sleep as long as possible. Because of that, I’ve gotten away from eating oatmeal for breakfast. It’s a bad excuse, I should just wake up 10 minutes earlier and make it happen. However, I solved the problem! I found a recipe for something called Overnight Oats…it’s freaking genius! I ate it for breakfast this morning and I’m obsessed. Here’s the recipe.
1/2 cup organic rolled oats (or steel cut oats)
1/3 cup vanilla Greek yogurt
1/3 cup of almond milk (I like the unsweeted vanilla almond milk)
1 tbspn of course ground flax seed
Add anything you want!
Stir and cover and put in the fridge
When you wake up in the morning, your oatmeal is ready to go and SO DELICIOUS. You don’t have to wait for it to cook or wait for it to cool down!
You eat it cold. This morning, I put a 1/2 cup of blueberries and 10 raspberries in there. It was 250 calories. I think it would be really good with almond butter on top! You have a complex carb, lean protein and omega 3s…the perfect meal and so freaking delish. You’ve got to try it and let me know what you think.
